Pork and Mango Skewers

Ingredients:

Pork and Mango Skewers

  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh calamansi lime juice
  • 2 tablespoons olive oil
  • 2 teaspoons dark brown sugar
  • 1 teaspoon Sriracha
  • 1 teaspoon smoked paprika
  • 2 medium cloves garlic, minced
  • Pinch of Kosher salt
  • 1 pound pork tenderloin, trimmed and cut into 1-inch cubes
  • 2 medium-sized ripe but firm mangoes, peeled, pitted cut into 1-inch cubes
  • 1 tablespoon chopped fresh cilantro
  • 8 wooden skewers, soaked in water for 30 minutes

Directions:

  1. In a medium bowl, whisk together orange juice, lime juice, oil, sugar, Sriracha, paprika, garlic, and salt.
  2. Add pork and toss to coat.
  3. Cover with plastic wrap and marinate in refrigerator for 1-4 hours.
  4. Thread pork and mango onto skewers, alternating them and beginning and ending with a piece of pork.
  5. Each skewer should have about 5 pieces of pork and 4 pieces of mango.
  6. Place skewers on a hot, cleaned, and well-oiled grill.
  7. Cook on medium-high heat for about 8 minutes, turning once, until pork is cooked through and slightly browned.
  8. Serve garnished with the cilantro.
