In a large saute pan, heat oil; add sausage and brown. Remove and place in a baking pan. Brown chicken on both sides in the same oil and arrange alternately in the baking pan with the sausages. Add in mushrooms.
In the same oil, add tomato sauce, olives, basil, garlic powder, salt and pepper. Cook well together for about 5 minutes, making a sofrito. Pour this entire sauce over the chicken and sausage.
Heat oven to 400°F and bake for 1 1/2 hours.
Serves 8.
Note: Sofrito is an aromatic mix of herbs and spices and is used as a base flavoring and seasoning to Latin cuisine.
