Poi Muffins

Ingredients:

Poi Muffins

  • Non-stick cooking spray
  • 1 1/3 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 2/3 cup poi (do not mix with water)
  • 1 egg
  • 3 tablespoons melted butter
  • 1/2 cup milk

Directions:

  1. Preheat oven to 400°F.
  2. Coat muffin pans with non-stick cooking spray.
  3. In a medium bowl, sift flour with baking powder, salt, and sugar; set aside.
  4. In a large bowl, combine remaining ingredients; stir in flour mixture.
  5. Spoon into prepared pans; bake for 30 minutes.

Makes 6 servings.
