Pipi Kaula (Dried Meat)

Ingredients:

Pipi Kaula (Dried Meat)

  • 1 lb flank steak or boneless chuck roast
  • 1/2 cup soy sauce
  • 1/2 cup water
  • 2 Hawaiian red peppers, minced

Directions:

  1. Cut meat with the grain into 1-inch strips.
  2. Place in shallow container or plastic bag.
  3. Combine soy sauce, water, and red peppers; pour over meat.
  4. Marinate in the refrigerator for at least 2 hours.
  5. Drain and arrange meat on cooling racks set on baking sheets.
  6. Dry in electric oven at 150°F for 7 to 8 hours or until of "jerky" texture.
  7. Meat can also be dried in an electric dehydrator following instructions, or dried in a dry box for a day, or until meat is dried, turning every 4 hours.
  8. To serve, fry in olive or peanut oil and slice across grain in bite-size pieces.

Makes 4 servings.
