Pineapple Salsa

Pineapple Salsa

  • 2 cups diced pineapple*
  • 5 basil leaves, chopped
  • 1/2 bunch Chinese parsley, chopped
  • 2 green onions, chopped
  • 1/4 cup vinegar
  • 1 Serrano chile, seeded and diced or
  • 1/2 teaspoon Japanese 7-pepper spice mix
  • 1 tablespoon sugar
  • Freshly ground pepper to taste


  1. Combine all ingredients.
  2. Serve over grilled fish, chicken, pork, or with chips.

Makes 2 cups.

*Other fruits such as papaya, mango, nectarines, or plums may be used in place of the pineapple.
