Pineapple-Ginger Dressing

Ingredients:

Pineapple-Ginger Dressing

  • 1 cup rice vinegar
  • 1 cup crushed pineapple
  • 1/4 cup light soy sauce
  • 1/4 cup turbinado or brown sugar
  • 1/2 cup diced tomato
  • 1/4 cup minced yellow bell pepper
  • 2 tablespoons minced red onion
  • 1 1/2 teaspoons grated ginger root
  • 1 1/2 teaspoons dried tarragon leaves
  • White pepper to taste

Directions:

  1. In a bowl, combine all ingredients; whisk until well blended.
  2. For a finer texture, dressing can be blended.
  3. Chill for several hours, or overnight; serve over greens, pasta, or meat.
