Peche-Peche (Purple Rice Dessert)

Ingredients:

Peche-Peche (Purple Rice Dessert)

  • 2 cups mochi rice (glutinous or sweet rice)
  • 2 tablespoons pirurutung (dark purple rice)
  • 2 cups water
  • 1/2 cup sugar
  • 1 1/2 cups shredded coconut

Directions:

In a rice cooker or 2-quart saucepan, rinse and drain mochi rice. Add pirurutung and water; cook until rice is tender, about 20 minutes. Add sugar and mix well. Cool and form rice into 1 1/4-inch balls. Coat with coconut. Makes 4 dozen balls.
