Papayas Stuffed with Chicken Curry

Ingredients:

Papayas Stuffed with Chicken Curry

  • 2 tablespoons butter or margarine
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon minced ginger root
  • 1 1/2 tablespoons flour
  • Dash of salt
  • 2 to 3 teaspoons curry powder
  • 1/2 cup chicken broth
  • 1/2 cup milk
  • 2 cups cubed cooked chicken
  • 2 firm ripe papayas, halved and seeded
  • 1/4 cup flaked, unsweetened coconut, toasted (optional)
  • Chutney
  • Lime slices for garnish

Directions:

  1. In a saucepan, heat butter; add onion, garlic, and ginger; saute for 5 minutes.
  2. Add flour, salt, and curry powder; mix well.
  3. Gradually stir in broth and milk; cook until thickened.
  4. Stir in chicken; spoon into papaya halves and top with coconut.
  5. Serve with chutney.
  6. Garnish with lime slices.

Makes 4 servings.
