Palak Dal

Ingredients:

Palak Dal

  • 1 cup split mung beans
  • 3 cups water
  • 1 teaspoon turmeric powder
  • 3 tablespoons vegetable oil or ghee
  • 1 teaspoon cumin seeds
  • 6 cloves garlic finely chopped
  • 1-inch piece fresh ginger finely chopped
  • 3/4 cup roughly chopped spinach leaves
  • Salt to taste
  • Juice of half lemon

Directions:

  1. In a heavy bottom sauce pan on medium heat, combine mung beans, water, turmeric and cook for 25-30 minutes.
  2. Drain mung beans.
  3. In a large sauce pan on medium heat, heat oil or ghee.
  4. Add cumin seeds; when seeds crackle, add garlic and ginger and cook until golden brown.
  5. Add chopped spinach, salt and cooked mung beans.
  6. Season to taste.
  7. Continue to simmer on a low heat for 2 minutes, stirring to make sure it does not stick to the bottom of the pan.
  8. Add lemon juice and turn the heat off.
  9. Serve warm with rice.
