Oliebollen – Traditional Dutch Doughnuts

  • 1 tablespoon dry yeast
  • 1 1/4 cup warm milk
  • 3 1/4 cups flour
  • 2 teaspoons salt
  • 1 tablespoon sugar
  • 2 eggs
  • 1 1/4 cup raisins (soaked, washed and dried)
  • 1 large apple (peeled, cored and chopped into cubes)
  • Oil for deep frying
  • Powdered sugar for icing

In a small mixing bowl dissolve yeast in milk, leave in for a few minutes to get frothy. In a separate mixing bowl mix together flour, salt and sugar. Add eggs and yeast mixture to flour, using a wooden spoon mix together until it becomes a gluten texture. Add raisins and apples, mix in well, cover bowl and let sit for 1 hour.

In a deep fryer heat oil to 340 degrees. Using an ice cream scoop, spoon out dough and let slide into the oil. Let fry until golden brown 4-5 minutes. With a slotted spoon, remove from oil and place into a colander layered with paper towels to absorb the remaining oil. Dust with powdered sugar and serve.
