Not Just Oatmeal Cookies

Ingredients:

Not Just Oatmeal Cookies

  • 1 cup (2 sticks) butter, softened
  • 1 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 2 cups uncooked oats
  • 1 1/4 cup crispy rice cereal
  • 1/4 cup craisins, finely chopped
  • 1 cup coarsely chopped macadamia nuts
  • 3/4 cup chocolate chips

Directions:

  1. Heat oven to 350°F.
  2. Beat together butter and sugars until creamy.
  3. Add eggs and vanilla, beat well.
  4. Add flour, baking soda, cinnamon, and salt. Mix well.
  5. Stir in oats until incorporated.
  6. Gently blend in crispy rice cereal.
  7. Add craisins, nuts and chocolate chips.
  8. Place parchment paper on cookie sheets.
  9. Drop dough by rounded tablespoons on parchment paper.
  10. Bake 9-12 minutes, or until golden brown.
  11. Move to wire rack to cool completely.
  12. To freeze for future use, place inside plastic freezer bag.
  13. Freeze up to 6 months.

Makes 4 dozen.
