Moku’s Simple Beef Stew
Try this delicious recipe from the Electric Kitchen!
- 2 tablespoons olive oil
- 6 pounds stew meat
- 1 1/2 tablespoons Hawaiian salt
- 3 large onions, chopped
- 4-6 stalks celery, chopped
- 8-10 cups water
- 4-6 bay leaves
- 1 beef bouillon cube
- 1 (8-ounce) can tomato sauce
- 4 large carrots, chopped into 1-inch pieces
- 2 large potatoes, chopped
- 5 tablespoons each corn starch and water to make a slurry
Directions:
- In a large pot, heat oil on medium-high heat; add meat and Hawaiian salt and brown on all sides.
- Add onions and celery and brown, about 5-7 minutes.
- Add water, bay leaves, bouillon cube and tomato sauce; increase heat and bring to a rapid boil; lower heat and boil until meat is fork-soft, about 2 hours.
- Skim fat and adjust seasonings if needed.
- Add carrots and cook for about 10-15 minutes; add potatoes and cook for about 10-15 minutes; add slurry to thicken as desired.
- Serve with rice and macaroni salad.
Serves 12.
