Moffles (mochi flour waffles) with Azuki Bean Cream

Ingredients:

Melted butter or cooking spray for waffle iron
1 cup flour
1 cup mochiko (rice flour)
1/4 teaspoon salt
4 tablespoons brown sugar
3 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
1 cup sweetened azuki beans, canned variety or homemade
1/2 cup sweetened condensed milk

Directions:

  1. Preheat waffle iron and generously brush with melted butter or cooking spray.
  2. In a large mixing bowl, combine both flours, salt, sugar, and baking powder; then add milk and eggs.
  3. Mix until just combined.
  4. Pour batter into preheated waffle iron and cook until crisp and brown, about 5-8 minutes.
  5. Top with a large rounded scoop of azuki beans and drizzle with condensed milk serve immediately.

Makes about 4 large Moffles.
