Mock Crab Poke

1 lb imitation crab legs
1 small cucumber
1/2 cup thinly sliced onion
3 tablespoons chopped green onions
1 teaspoon toasted sesame seeds
2 Hawaiian red peppers, seeded and minced
1/4 teaspoon salt
1 teaspoon sesame oil


  1. Cut crab pieces into 1-inch lengths.
  2. Cut cucumber lengthwise into halves, remove seeds, and thinly slice cucumber.
  3. Combine crab, cucumber, onion, green onions, sesame seed, peppers, and salt.
  4. Gently mix in sesame oil.
  5. Chill.

Makes 12 servings.

50 calories, 1 g total fat, 0 g saturated fat, 10 g cholesterol, 360 mg sodium, 5 g carbohydrate, 0 g fiber, 3 g sugar, 5 g protein.
