Mile-High Strawberry Pie

  • 1 (10-ounce) package frozen strawberries
  • 1 cup sugar
  • 2 egg whites
  • 1 teaspoons vanilla
  • 1 tablespoon lemon juice
  • Dash of salt
  • 1 cup heavy cream, whipped
  • 1 9-inch pie shell, baked according to package directions


  1. Partially thaw strawberries.
  2. In large bowl of electric mixer, combine strawberries, sugar, egg whites, vanilla, lemon juice and salt.
  3. Beat at high speed for 15 minutes or until mixture is very thick and fluffy.
  4. Fold in whipped cream.
  5. Pour into pie shell and freeze until firm.

Serves 8.

I've been making Mile High Strawberry Pie since I first collected the recipe on a real card (not on the internet) in the late 1970s! It's delicious and my dinner guests always love it!
