Mark's Favorite Pasta Sauce

Ingredients:

Mark's Favorite Pasta Sauce

  • 1 can (11 1/2 oz) tomato-vegetable juice
  • 1 teaspoon dried onion flakes
  • 1 red bell pepper, cut into strips
  • 1 cup diced eggplant or zucchini
  • 1 can (14 1/2 oz) chopped tomatoes, including liquid
  • 1 can (15 oz) small white beans, including liquid
  • 1 jar (7 1/2 oz) roasted red peppers
  • 2 to 3 tablespoons fresh basil leaves, coarsely chopped
  • 4 to 8 oz pasta, cooked

Directions:

  1. In a large non-stick skillet heat juice and onion flakes.
  2. Add bell pepper and eggplant; cook until softened.
  3. Lower heat; add tomatoes and beans.
  4. Cook for a few minutes.
  5. Add roasted peppers and basil; cook for 5 more minutes.
  6. Serve over pasta.

Make 4 servings.
