Marinated Zucchini Spread

Ingredients:

Marinated Zucchini Spread

  • 1 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 large zucchini, trimmed and grated
  • Salt and freshly ground pepper to taste
  • 2 tablespoons chopped green olives
  • Chopped fresh thyme to taste

Directions:

  1. Heat olive oil in a large saute pan, over medium heat; saute garlic until fragrant and softened, about 2 minutes.
  2. Add grated zucchini and cook for about 5 minutes or until it dries out a bit.
  3. Remove from heat; add salt, pepper, olives and thyme.
  4. Stir until combined.
  5. Transfer to a container with a tight-fitting lid.
  6. Refrigerate overnight.

Makes 2 cups.

Approximate Nutrient Analysis per 2 Tablespoon spread on 1 slice Italian bread with brushed olive oil (based on 1 pound zucchini and not including salt to taste):
