Mango Salsa

Mango Salsa

  • 1 can (30 ounces) whole tomatoes, chopped with juice
  • 2 large bunches cilantro, chopped
  • 1 1/2 teaspoons Hawaiian salt or to taste
  • 6 large fresh tomatoes, diced
  • 1 bunch green onions, chopped
  • 1 whole sweet Maui onion, (chopped)
  • 1 can (4 ounces) chopped jalapenos, including juice
  • 1 cup firm ripe mangoes (Hayden variety recommended), peeled and diced


In a large bowl, mix all ingredients together. Chill for one hour. Serve with your favorite tortilla or pita chips. Makes about 12 cups.
