Mango Quesadillas with Mango Salsa

Mango Quesadillas with Mango Salsa

  • 8 (8-inch size) flour tortillas
  • 2 mangoes, peeled and thinly sliced
  • 8 oz mozzarella cheese, shredded
  • 8 oz brie cheese, sliced


  • 2 firm mangoes, cubed
  • 1/2 cup diced red onion
  • 2 tablespoons chopped garlic
  • 1/2 cup chopped cilantro (Chinese parsley)
  • Juice of 2 limes
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • Salt and pepper to taste


  1. Place equal parts of mozzarella, mango, and brie on 1/2 of each of the 8 tortillas.
  2. Fold each tortilla in half.
  3. Heat a non-stick skillet over medium-high heat and grill each quesadilla for 2 minutes on each side.
  4. Serve warm with mango salsa.


  1. Combine all ingredients in a bowl, and chill for one hour before serving.

Makes 2 cups.
