Ingredients:
Mango Bread Anytime
Try this delicious recipe from the Electric Kitchen!
- 2 cups flour
- 1 1/2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 3 eggs, well beaten
- 1 1/2 cups sugar
- 3/4 cups salad oil
- 1 teaspoon vanilla
- 2 cups mangoes, chopped (Drain excess liquid if using defrosted mangoes.)
- 1 cup macadamia nuts, chopped in quarters
Directions:
- In a large bowl combine flour, baking soda, cinnamon, and salt.
- Mix beaten eggs with sugar, salad oil and vanilla.
- Pour dry ingredients into wet.
- Mix until incorporated.
- Add mangoes and nuts.
- Pour into 2 loaf pans sprayed with non-stick baking spray.
- Bake at 350°F for 45 to 55 minutes.
Makes 2 loaves.

Made this recipe without the nuts and it was so good!!! Very moist and delicious.

I love this recipe! Have made it several times. For cost reasons, I substituted roasted hazelnuts for macadamia nuts.

This Mango Bread recipe is so good and so easy. I'll definitely be making it again, again, and again. Oh, I used the small gold mangoes. They seem to be sweeter.
