Mango Bread Anytime

Ingredients:

Mango Bread Anytime

  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 3 eggs, well beaten
  • 1 1/2 cups sugar
  • 3/4 cups salad oil
  • 1 teaspoon vanilla
  • 2 cups mangoes, chopped (Drain excess liquid if using defrosted mangoes.)
  • 1 cup macadamia nuts, chopped in quarters

Directions:

  1. In a large bowl combine flour, baking soda, cinnamon, and salt.
  2. Mix beaten eggs with sugar, salad oil and vanilla.
  3. Pour dry ingredients into wet.
  4. Mix until incorporated.
  5. Add mangoes and nuts.
  6. Pour into 2 loaf pans sprayed with non-stick baking spray.
  7. Bake at 350°F for 45 to 55 minutes.

Makes 2 loaves.
