Makina Salad

Ingredients:

Makina Salad

  • 1/2 bunch makina (also known as Chinese cabbage, won bok, or celery cabbage)
  • 1 block (7 ounce size) kamaboko (Japanese steamed fishcake)
  • 1/2 cup mayonnaise (consider using reduced- or no-fat mayonnaise)
  • 2 teaspoons white miso (Japanese fermented soybean paste)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon sesame oil
  • 1 teaspoon sesame seed

Directions:

  1. Cut makina and kamaboko into julienne strips.
  2. Combine mayonnaise, miso, vinegar and sesame oil.
  3. Mix dressing with makina and kamaboko.
  4. Garnish with sesame seed.

Makes 6 servings.

Approximate Nutrient Analysis per serving:
200 calories, 17 g fat, 2 g saturated fat, 25 mg cholesterol, 500 mg sodium, 7 g carbohydrate, 1 g fiber, 1 g sugar, 6 g protein
