Mahimahi Dragon Fruit Pineapple Bake

Ingredients:

Mahimahi Dragon Fruit Pineapple Bake

  • 4 mahimahi fillets (about 6 ounces each)
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • 1 small can (8 ounces) pineapple chunks, drained
  • 1 dragon fruit, medium sized, cut in half lengthwise, peeled, and chopped into small cubes
  • 2 tablespoons fresh cilantro, chopped

Directions:

  1. Preheat oven to 400°F.
  2. Line baking sheet with parchment paper.
  3. Season both sides of fillet with pepper and lime zest, lightly pressing zest into fillet.
  4. Place fish on baking sheet.
  5. Place in center rack of oven and bake for 18-20 minutes or until fish is cooked.
  6. While fish is baking, in a medium bowl, combine pineapple, dragon fruit, and cilantro.
  7. Top pineapple mixture on fish during last 5 minutes of cooking.
  8. Topping also can be used as a garnish.

Makes 4 servings.
