Lomi Ahi on Sushi Rice (Compliments of Tanioka's Seafood and Catering)

Ingredients:

Lomi Ahi on Sushi Rice

  • 2 teaspoons shoyu
  • 1/2 teaspoon ground chili pepper or more to taste
  • 1/2 teaspoon wasabi paste (S&B brand if available)
  • Pinch of sea salt
  • 2 pounds ahi or aku, finely chopped
  • 4 cups cooked rice or sushi rice

For garnish:

  • 1/4 cup finely sliced Maui onion
  • 1/4 cup finely sliced green onion
  • 1/4 cup shredded nori
  • 1/4 cup salmon roe (optional)
  • 1/4 tobiko (flying fish roe) (optional)

Directions:

In a small bowl, mix the shoyu, chili pepper, wasabi, and salt; pour mixture over the fish and mix gently, but well. Spread the rice onto a serving platter. Place the ahi in little mounds all over the rice. Sprinkle with Maui onion, green onion, and shredded nori. Sprinkle with salmon roe and tobiko if desired. Makes 6 servings.
