Lemon Barbequed Cornish Game Hens

Ingredients:

Lemon Barbequed Cornish Game Hens

  • 3 Cornish game hens (1 pound size)
  • 1/2 cup lemon juice
  • 1/4 cup salad oil
  • 2 tablespoons chopped onion
  • 1 tablespoon fresh thyme or 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 clove garlic, crushed

Directions:

  1. Split Cornish game hens into lengthwise halves.
  2. Combine remaining ingredients.
  3. Marinate hens for 30 minutes; drain, saving marinade.
  4. Brush hens with marinade.
  5. Place skin side down on rack of broiler pan or barbeque grill and cook for about 20 minutes.
  6. Turn, brush with marinade, and cook for 15 more minutes or until done.

Makes 6 servings.
