Layered Cassava Custard Dessert

Ingredients:

Layered Cassava Custard Dessert

  • 2 pkg (1 lb size) frozen grated cassava, thawed
  • 1 cup sugar
  • 1 can (13.5 oz) coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 5 egg yolks (or 3 whole eggs)

Directions:

  1. Preheat electric oven to 350°F.
  2. Grease a 13 x 9 x 2-inch baking pan.
  3. In a bowl, combine cassava, sugar, and coconut milk; pour into prepared pan.
  4. Bake for 30 minutes.
  5. Combine remaining ingredients and pour over baked mixture.
  6. Bake for 30 more minutes; cool and cut into serving pieces.

Makes 32 servings.
