Kalua Pig and Lomi Salmon Summer Rolls

Ingredients:

Kalua Pig and Lomi Salmon Summer Rolls

  • 8 (8-1/2-inch) round rice paper wrappers
  • 3 cups baby spinach leaves
  • 1 cup finely shredded purple cabbage
  • 1 cup finely shredded carrot
  • 1/2 cup thinly sliced green onions
  • 2 cups kalua pig
  • 1 cup lomi salmon

Directions:

  1. Fill a medium frying pan with hot tap water.
  2. Completely submerge one wrapper in the hot water until soft and pliable.
  3. Remove wrapper and place on a clean kitchen towel.
  4. Layer a small amount of each vegetable in center of wrapper.
  5. Top with kalua pig and about 2 tablespoons of lomi salmon.
  6. Fold in ends of wrapper and roll tightly.
  7. Keep covered with a damp paper towel until you're finished making the remaining rolls.
  8. Repeat process with remaining wrappers.
  9. Slice in half and wrap tightly in plastic wrap to go.

Makes 8 rolls.
