Island Fresh Mango and Macnut Bread

Island Fresh Mango and Macnut Bread

  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 3 local eggs
  • 1 cup diced ripe local mango
  • 1/4 cup chopped macadamia nuts


  1. Preheat oven to 350°F.
  2. Coat a 9" x 13" loaf pan with non-stick cooking spray.
  3. Combine dry ingredients in large bowl.
  4. In another bowl, mix oil and eggs.
  5. Add egg mixture to dry ingredients and mix until smooth.
  6. Add mangos and nuts; stir to incorporate.
  7. Pour batter into loaf pan; cook for 45 minutes or until golden brown.

Makes 10 servings.
