Island Fresh Mango and Macnut Bread

Island Fresh Mango and Macnut Bread

  • 2 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 3 local eggs
  • 1 cup diced ripe local mango
  • 1/4 cup chopped macadamia nuts


Preheat oven to 350°F. Coat a 9" x 13" loaf pan with non-stick cooking spray. Combine dry ingredients in large bowl. In another bowl, mix oil and eggs. Add egg mixture to dry ingredients and mix until smooth. Add mangos and nuts; stir to incorporate. Pour batter into loaf pan; cook for 45 minutes or until golden brown. Makes 10 servings.
