Hollandaise Sauce

Ingredients:

Hollandaise Sauce

  • 4 egg yolks
  • 2 tablespoons tarragon vinegar
  • 1/2 teaspoon lemon juice
  • 1/8 teaspoon salt
  • Dash of pepper
  • 1/2 lb butter, melted

Directions:

  1. Beat egg yolks until thick and lemon colored.
  2. Add vinegar, lemon juice, salt and pepper.
  3. Place bowl over hot (not boiling) water and beat until thick, about 10 minutes.
  4. Add butter slowly, beating constantly.

Makes 8 servings.
