Herb-Flavored Vegetables Vegetarian

Herb-Flavored Vegetables Vegetarian

  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 10 large mushrooms, sliced
  • 1 small red onion, sliced
  • 1 medium carrot, julienned
  • 1 medium stalk broccoli, cut into florets
  • 1 large yellow bell pepper, sliced
  • Salt and pepper to taste
  • 1/2 cup red or white wine
  • A few sprigs of fresh rosemary, thyme and basil


  1. Heat a medium skillet; add oil and lightly sauté garlic.
  2. Add mushrooms, onion, carrot, broccoli, and bell pepper; sauté for a few minutes.
  3. Season with salt and pepper.
  4. Add wine and herbs.
  5. Cover and steam for a few minutes.

Makes 8 servings.

Note: Other vegetables, such as yellow crook neck squash, zucchini, or cauliflower can be added or substituted.
