Hawaiian-Style Stuffed Chicken

Hawaiian-Style Stuffed Chicken

  • 3 to 4 lb whole chicken
  • 1 lb cooked taro, diced
  • 1 lb cooked ulu (breadfruit), diced (optional)
  • 1 lb cooked sweet potatoes, diced
  • 1 small carrot, minced
  • 1 stalk celery, minced
  • 1 small onion, minced


  1. Using a sharp knife, bone chicken, leaving skin, wings, and legs intact.
  2. In a large bowl, combine the remaining ingredients.
  3. Stuff chicken with mixture.
  4. Flatten chicken slightly and place, breast side up, on a roasting rack in a baking pan.
  5. Roast in electric oven at 350°F for 1 hour or until golden brown.
  6. Cool for 15 minutes before slicing.

Makes 8 to 10 servings.
