Grilled Jumbo Shrimp

Ingredients:

Grilled Jumbo Shrimp

  • 2 1/2 pounds jumbo shrimp, peeled and de-veined

Marinade:

  • 1/4 cup olive oil
  • 1/4 cup chopped Chinese parsley
  • 1/2 shallot, diced
  • 3 tablespoons lemon juice
  • 1 teaspoon dried basil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Directions:

  1. Place shrimp in a resealable plastic bag.
  2. In a small bowl, mix together marinade ingredients and pour mixture over shrimp.
  3. Seal bag and marinate for 1-2 hours.
  4. Preheat grill for medium-high heat.
  5. Before placing shrimp on grill, oil grill grates well.
  6. Remove shrimp from bag and discard marinade.
  7. Place shrimp on grill and cook for 2-3 minutes on each side or until they appear pink and firm all the way around.
  8. Remove from heat and serve immediately.
  9. Depending on the type of your grill, threading the jumbo shrimp onto skewers before grilling might be an alternative.
  10. Place about 4-5 shrimp onto each skewer and cook as instructed.
