Green Squash and String Beans (Lenten)

Ingredients:

Green Squash and String Beans (Lenten)

  • 1/4 cup vegetable oil
  • 1 (12-ounce) package fresh string beans, cut into 11/2-inch pieces
  • 2 medium sized green squash (zucchini), cut length wise into 11/2-inch pieces
  • 2 large yellow onions, peeled and sliced thin
  • 1 cup fresh tomatoes (cut into ½-inch pieces)
  • 1/4 teaspoon dried parsley (or 1 teaspoon fresh parsley)
  • 1/4 teaspoon dried oregano
  • Salt to taste

Directions:

  1. Heat large sauté pan over medium-high heat, add oil and heat through.
  2. Add remaining ingredients and lower temperature to medium heat and cook together for 1 hour, stirring occasionally.

Makes 6 servings.
