Green Goddess Dressing

Ingredients:

Green Goddess Dressing

  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup snipped fresh chives
  • 1/4 cup minced fresh cilantro (Chinese parsley)
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 5 to 6 anchovy fillets, rinsed, patted dry, and minced
  • Salt and fresh ground pepper to taste

Directions:

  1. Combine all ingredients in a blender.
  2. Blend until chives and cilantro are dissolved.
  3. Adjust seasonings to taste.
  4. Use immediately or cover and refrigerate.

Makes about 2 1/4 cups dressing.
