Grandpa Jerry "Sambo" Saito's Layered Spam Rice

  • 6 cups cooked rice
  • 2 cans (12 ounce size) Spam®
  • 2 packages (10 ounce size) takuwan (Japanese pickled long white radish), drained
  • 2 packages (1.19 ounce size) shiofuku konbu (Japanese seasoned kelp)
  • 1 bottle (1.9 ounce size) furikake (Japanese seasoned seaweed mix)


Chop Spam® and fry. Chop takuwan. While the rice is still hot, press 3 cups into a 9" x 13" pan. Add the following in layers: 1) shiofuku konbu, 2) fried Spam® and 3) chopped takuwan. Add the remaining 3 cups rice and press again. Sprinkle furikake. When ready to serve, cut into bars. Makes about 18 servings.
