Grandpa Jerry "Sambo" Saito's Layered Spam Rice

Ingredients:

Grandpa Jerry "Sambo" Saito's Layered Spam Rice

  • 6 cups cooked rice
  • 2 cans (12 ounce size) Spam®
  • 2 packages (10 ounce size) takuwan (Japanese pickled long white radish), drained
  • 2 packages (1.19 ounce size) shiofuku konbu (Japanese seasoned kelp)
  • 1 bottle (1.9 ounce size) furikake (Japanese seasoned seaweed mix)

Directions:

  1. Chop Spam® and fry.
  2. Chop takuwan.
  3. While the rice is still hot, press 3 cups into a 9" x 13" pan.
  4. Add the following in layers: 1) shiofuku konbu, 2) fried Spam® and 3) chopped takuwan.
  5. Add the remaining 3 cups rice and press again.
  6. Sprinkle furikake.
  7. When ready to serve, cut into bars.

Makes about 18 servings.

230 calories, 12 g fat, 4 g saturated fat, 25 mg cholesterol, 930 mg sodium, 25 g carbohydrate, 1 g dietary fiber, 1 g sugar, 8 g protein
