Goya Champuru (Stir-fried Bitter melon with Pork and Tofu)

Ingredients:

Goya Champuru (Stir-fried Bitter melon with Pork and Tofu)

  • 1/4 pound belly pork
  • 2 medium-sized bitter melon
  • 1/2 block (20 ounce size) firm tofu, drained
  • 2 teaspoons vegetable oil
  • 2 teaspoons salt

Directions:

  1. In a small saucepan, cover pork with just enough water to cover pork, bring to a boil, cover and simmer until pork is tender and can be easily pierced.
  2. Cool, cut into 1/4-inch slices.
  3. Cut bitter melon in half lengthwise, remove seeds, sprinkle with salt and let stand for 20 minutes.
  4. Rinse and drain well.
  5. Slice into 1/4-inch wide slices.
  6. Heat oil in skillet to medium-high, add pork and fry until lightly browned.
  7. Break tofu into pieces and stir-fry until browned.
  8. Add bitter melon, increase heat, and season with salt.
  9. Cook for 1 minute or until cooked to desired doneness.

Makes 3 servings.
