Golden Garlic Crab

"If you are a garlic and crab lover, this dish will knock your socks off! Have some fresh baguette bread on hand to soak up the sauce."

  • 1 whole bulb of garlic, chopped
  • 1 small onion, chopped
  • 1 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon red chili pepper flakes
  • 1/2 teaspoon fresh ground black pepper
  • 1 pound crab (Snow, Dungeness or King Crab - 1/2 lb per person), crack shells while frozen
  • 5 cups cooked white rice
  • 1 teaspoon chopped parsley (Italian or Cilantro)
  • 1 lemon, quartered

Place garlic, onion, butter, salt, red and black pepper into a roasting pan and place in a 450°F oven. Watching carefully, cook until onion and garlic turn golden brown. Remove pan from the oven, add crab and mix well, making sure the crab (shells and all) is well coated with the mixture. Return pan to oven; raise oven temperature to 475°F and cook for 15-20 minutes, turning crab about every 5 minutes. Place crab on cooked rice on large serving platter. Pour garlic sauce over the crab. Sprinkle with parsley and garnish with lemon. Serve immediately. Makes 2 servings.
