Giblet Gravy

Ingredients:

Giblet Gravy

  • 2 tablespoons salad oil or turkey drippings
  • 3 tablespoons unsalted butter
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped bell pepper
  • 2 teaspoons minced garlic
  • Turkey giblets, chopped
  • 2 tablespoons Creole seasoning
  • 1/4 cup flour
  • 3 1/3 cups chicken broth

Directions:

  1. In a large skillet, heat oil or drippings; add butter.
  2. Sauté onion, celery, bell pepper, and garlic for about 5 minutes.
  3. Add giblets and seasoning; cook for a few minutes.
  4. Stir in flour and cook until mixture is golden brown, about 3 minutes.
  5. Add broth and bring to a boil; lower heat and simmer until gravy is thick.

Makes about 3 cups.
