Garden Fresh Grilled Flatbread

Ingredients:

Garden Fresh Grilled Flatbread

  • 1 13.8 ounce can prepared pizza dough
  • 2 tablespoons olive oil, divided
  • 1 bunch green onions, sliced
  • 1 clove garlic, minced
  • 1 1/2 cups fresh asparagus spears, cut into 1-inch pieces
  • 1 1/2 teaspoons fresh, chopped sage
  • 3 cups fresh baby spinach
  • 1 fresh peach, cut into 1/2 inch segments and grilled
  • 1/2 cup Feta cheese crumbled
  • Salt and pepper, to taste
  • Balsamic vinegar (optional)

Directions:

  1. Heat cleaned and oiled grill to high.
  2. In large skillet over medium-high, heat tablespoon of oil; sauté onions, garlic, and asparagus for 3-5 minutes.
  3. Add sage; season with salt and pepper; remove from heat.
  4. Shape dough into a large rectangle; place on grill.
  5. Cover and cook until bottom is crisp and browned, about 3-4 minutes.
  6. Flip dough; brush lightly with remaining oil.
  7. Layer vegetables and peaches; top with cheese.
  8. Reduce heat to medium; cook covered for another 2-3 minutes until cheese is melted.
  9. Remove from grill.
  10. Drizzle top with balsamic vinegar.

Makes 4 servings.
