Fukuda's Shiitake Crusted Fresh Fish with Sake-Wasabi Buerre Blanc

Fukuda's Shiitake Crusted Fresh Fish with Sake-Wasabi Buerre Blanc

  • 1/2 cup chopped dried and soaked, or fresh shiitake mushrooms (stems included), whole or pieces
  • 1/2 cup chopped fresh basil
  • 2 cups panko (Japanese bread crumbs)
  • 6 (6 ounce size) fresh fish fillets (such as mahi mahi)
  • Salt
  • Freshly ground black pepper
  • 1/2 cup mayonnaise
  • 2 teaspoons Sriracha (Thai garlic-chile paste)
  • About 3 tablespoons olive oil for sautéing

Sake-Wasabi Buerre Blanc:

  • 1 cup sake
  • 1/2 cup sour cream
  • 2/3 cup salted butter
  • 1 tablespoon wasabi (Japanese horseradish) paste
  • 1 teaspoon shoyu or more, if desired
  • Salt and pepper to taste (optional)


  1. Add mushrooms and basil to panko; mix well.
  2. Place panko mixture in a shallow dish.
  3. Lightly season fillets with salt and pepper.
  4. Combine mayonnaise and Sriracha; spread evenly on each fillet, lightly coating both sides.
  5. Roll fillets in panko mixture to coat each side evenly.
  6. In a skillet, add enough olive oil to coat the bottom; heat over medium heat.
  7. Sauté fillets until cooked through and firm to the touch.
  8. Place fillets on warm plates and garnish with Wasabi Buerre Blanc.

Makes 6 servings.

Sake-Wasabi Buerre Blanc:

  1. In a saucepan, boil the sake over medium heat, until it reduces by about a quarter.
  2. Add sour cream and cook until it reduces to 1/2 cup.
  3. Lower heat and whisk in butter, a few chunks at a time, making sure sauce does NOT boil.
  4. Add wasabi and shoyu.
  5. Season with salt and pepper, as desired.
