Fresh Ginger Spice Cake

Ingredients:

Fresh Ginger Spice Cake

  • 1 cup molasses
  • 3/4 cup sugar
  • 1 cup vegetable oil
  • 2 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon pepper
  • 1 cup boiling water
  • 2 teaspoons baking soda
  • 1/4 cup peeled and finely minced, fresh ginger
  • 2 eggs, room temperature

Directions:

  1. Preheat oven to 350°F.
  2. Spray a 13 x 9-inch baking pan with cooking spray.
  3. In a large mixing bowl, combine molasses, sugar, and oil.
  4. In a separate bowl, sift together flour, cinnamon, cloves and pepper.
  5. In a measuring cup, add baking soda to boiling water and stir to dissolve; add to molasses mixture.
  6. Mix in ginger and stir in dry ingredients.
  7. Add eggs and beat thoroughly.
  8. Pour into prepared baking pan.
  9. Bake for 35 minutes or until a cake tester comes out clean.
  10. Cool 30 minutes and cut into squares.
  11. Sprinkle with powdered sugar if desired.

Makes 12 servings.
