Ewa Sweet Onion Asian Marinade (for beef or chicken)

  • 1 medium Ewa sweet onion, coarsely chopped
  • 1/4 cup pineapple chunks
  • 1 small garlic glove, peeled
  • 1 stalk lemongrass
  • 1 tablespoon ginger
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fish sauce
  • 2 pounds skirt steak or chicken thighs
  • Salt and pepper to taste


  1. In a food processor, combine onion, pineapple, garlic, lemongrass, ginger, olive oil, and fish sauce.
  2. Mix until smooth.
  3. Put meat in a large food container; pour in marinade to coat.
  4. Wrap well.
  5. Chill for at least 4 hours or overnight.
  6. Remove meat from marinade and season both sides with salt and pepper.
  7. Cook on grill for best flavor.

Makes 5 servings.
