Energy Bars

Ingredients:

Energy Bars

  • 2 cups quick oats
  • 4 cups crisp rice cereal (such as Rice Krispies)
  • 1 cup unsalted roasted nuts
  • 1 cup (2 sticks) butter
  • 1 cup peanut butter
  • 1 (10-ounce) package marshmallows
  • 1 cup raisins or dried cranberries

Directions:

  1. In a large saucepan, heat oats, rice cereal, and nuts over low heat for 5 to10 minutes.
  2. In a separate saucepan, melt butter; peanut butter and marshmallows over low heat; mix well.
  3. Pour butter mixture and raisins into the warm cereal mixture; mix well.
  4. Press firmly into a 13 x 9 x 2-inch pan.
  5. Cool; cut into bars and wrap each bar in waxed paper.

Makes 48 bars.

Approximate Nutrient Analysis per energy bar:
130 calories, 8 g fat, 3.5 g saturated fat, 10 mg cholesterol, 70 mg sodium, 14 g carbohydrate, 1 g fiber, 6 g sugar, 3 g protein
