Energy Bars

  • 2 1/2 cups crisp rice cereal (such as Rice Krispies)
  • 1 cup quick oats
  • 3/4 cup toasted sesame seeds
  • 1 package (10 ounces) marshmallows
  • 1/2 cup peanut butter
  • 1/4 cup butter or margarine
  • 1/4 cup peanuts
  • 1/2 cup raisins (or other dried fruit such as cranberries, blueberries, or diced apricots)


Grease a 13 x 9 x 2-inch pan. In a saucepan or skillet, combine rice cereal, oats and sesame seed; toast over medium heat a few minutes. In a large saucepan, combine marshmallows, peanut butter and butter; melt over low heat. Stir in cereal mixture, peanuts and raisins. Press firmly into prepared pan. Cool; cut into bars. Makes 36 bars.

110 calories, 6 g fat, 2.5 g saturated fat, 50 mg cholesterol, 60 mg sodium, 13 g carbohydrate, 1 g fiber, 6 g sugar, 2 g protein

Very good! Used a 7 1/4 x 11 pan for thicker bars, also easier to flatten evenly.
