Ellen's Chocolate Mochi

Ingredients:

Ellen's Chocolate Mochi

  • 2 cups mochiko
  • 1 1/2 cups sugar
  • 1 tablespoon baking soda
  • 1 cup chocolate chips
  • 1/2 cup butter or margarine
  • 1 can (13 ounces) evaporated milk
  • 2 teaspoons vanilla
  • 2 eggs, beaten

Directions:

  1. Preheat oven to 350°F.
  2. Grease a 13 x 9 x 2-inch pan.
  3. Sift mochiko, sugar, and baking soda into a large bowl.
  4. Melt chocolate chips with butter.
  5. Mix well with evaporated milk, vanilla, and eggs.
  6. Stir into dry ingredients until batter is smooth.
  7. Pour into prepared pan.
  8. Bake for 45 to 55 minutes.

Makes 24 servings.
