Eggs Benedict

Ingredients:

Eggs Benedict

  • 8 English muffins
  • 16 teaspoons butter
  • 16 - 1 oz slices of ham, Canadian bacon or turkey
  • 16 poached eggs
  • Hollandaise sauce (see recipe below)

Directions:

  1. Split, toast, and butter English muffins.
  2. Top each half with a slice of ham, Canadian bacon, or turkey, a poached egg, and a generous spoonful of Hollandaise sauce.
  3. Sprinkle with paprika and garnish with parsley.

Makes 8 servings.
