Easy Chicken Luau

  • 5 lb chicken thighs
  • 1 lb frozen spinach, thawed and drained
  • 1 1/2 cups skim milk
  • 1/4 teaspoon coconut extract
  • 1 can cream of chicken soup (or reduced fat/sodium)


  1. Remove skin, bones, and visible fat from chicken; place in a 13 x 9 x 2-inch baking dish.
  2. Spread spinach over chicken.
  3. In a small bowl, combine remaining ingredients; pour over spinach.
  4. Bake at 350°F for 1 hour.

Makes 10 servings.
