Easy Barbecued Chicken

Ingredients:

Easy Barbecued Chicken

  • 3 lb boneless, skinless chicken thighs
  • 2 cloves garlic, crushed
  • 2 pieces ginger root, crushed
  • 2 teaspoons Hawaiian salt
  • Water
  • 1/2 cup soy sauce
  • 1/2 cup catsup
  • 1/2 cup sugar

Directions:

  1. In a saucepan, combine chicken, 1 clove of the garlic, 1 piece of the ginger root, the salt, and enough water to cover chicken.
  2. Cover and bring to a boil.
  3. Lower heat and simmer for 15 minutes or until chicken is done.
  4. To make the marinade, mince the remaining garlic and ginger.
  5. Combine with soy sauce, catsup, and sugar.
  6. Drain cooked chicken and soak in marinade for 1 hour or longer.
  7. Place chicken on rack of broiler pan.
  8. Broil, 2 to 3 inches from unit, in electric oven for 4 to 5 minutes or until chicken is heated through.

Makes 8 servings.
