Curried Chicken and Artichoke Salad

Ingredients:

Curried Chicken and Artichoke Salad

  • 1 (10-ounce) can chunk white-meat chicken, drained
  • 1 (6-ounce) jar marinated artichoke hearts, drained and chopped
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon curry powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Directions:

In a medium bowl toss chicken and artichoke hearts. In a small bowl, blend oil, vinegar, curry powder, garlic powder and pepper. Gently stir oil blend into chicken mixture. Serves 4.
