Creamy Cucumber Dipping Sauce

Ingredients:

Creamy Cucumber Dipping Sauce

  • 1 medium cucumber
  • 2 cups plain yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh dill
  • 1 teaspoon salt
  • 1 teaspoon fresh ground pepper or to taste
  • Fresh chopped mint, parsley and/or cilantro to taste (optional)

Directions:

  1. Grate cucumber, lightly salt and set in a colander to drain.
  2. Press out remaining water.
  3. In a small bowl, combine remaining ingredients.
  4. Cover and refrigerate for an hour to meld flavors.

Makes about 3 cups.
