Cranberry Chutney

Ingredients:

Cranberry Chutney

  • 1 pound fresh cranberries
  • 2 cups water
  • 2 cups sugar
  • 1/4 cup vinegar
  • 1 cup raisins
  • 2 tablespoons brown sugar
  • 1 teaspoon minced ginger root
  • 1/2 teaspoon salt
  • 1 clove garlic, minced

Directions:

  1. Sort and clean cranberries, discarding the soft ones.
  2. Rinse and drain.
  3. In a large pot, bring water and sugar to a boil.
  4. Add cranberries and remaining ingredients.
  5. Simmer, stirring occasionally, until cranberries have popped, about 10 minutes.
  6. Cool.

Makes 1 quart or 64 tablespoon servings.
